The cooler temps of the fall typically signals all things pumpkin and apple! People visit apple orchards and pumpkin patches and come home with their pickings! These Apple Crunch Muffins are perfect for using some of those orchard apples!
I’ve been craving something created with apples, so I did just that! I took to my recipe box and combined some recipes as well as adding my own twists.
The Recipe
Apple Crunch Muffins
Equipment
- Hand Mixer
- Oven
- Muffin Pan
Ingredients
- 3 eggs
- 2 cups sugar
- 1.5 cup oil
- 2 teaspoon vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- chopped apples
- 2 tablespoons butter melted
- 1/2 cup brown sugar
- 2 tablespoons quick oats
- 1 tablespoon flour
Instructions
- Beat your eggs until foamy and then gradually add sugar
- Blend in oil & vanilla
- Add flour, salt, & baking powder
- Finely Chop the apples, add desired amount to batter
- Grease a muffin pan and fill each cup about 2/3 full
- Melt butter and combine with brown sugar, quick oats, and 1 tablespoon flour
- Top each muffin with a small spoon full of chopped apples & crumb mixture
- Bakat at 350 for 20 minutes or until golden
Cook’s Notes
- This recipe is a great balance for me. The muffin part isn’t too sweet, so it balances out the sweetness of the crunch topping and apples.
- The other fun thing about this recipe is that you can mix and match your muffins. I made some with just apples on top, some with just crunch topping on top, and some with both!
- You can choose to mix your apples into the batter or simply top your muffins with the chopped apples depending on how much you like apple!
- Give the muffins a try and try other fruits! You could easily top a few with raisins, raspberries, or blueberries as well!
- I love using silicone muffin pans to avoid having to grease pans, plus muffins come out easily!
Healthy Substitutions
There are some very easy substitutions you can make to help these muffins be a little healthier!
- Use coconut oil instead of vegetable oil
- You can use measure for measure gluten free flour in place of regular flour
- Use unsweetened applesauce instead of oil
- Use agave in place of the processed sugar. You should reduce the amount by 2/3 cup however!
