Creamy Chicken & Rice is always a comfort food in our house! However, not only can we not do condensed soup anymore thanks to my gluten allergy, but they also aren’t healthy. So, I was thankful that my mom reminded me of my great-aunt’s chicken and rice recipe that is so delicious, but also free of soups! I’m happy to bring it to you two different ways!
Planning Meals
We are constantly in the battle of planning meals. I need variety, changing options all the time. T, on the other hand, can eat the same meal each week! There are only a few things that I can work into our meal plan like that! Add in the fact that we are now accomodating a gluten allergy and our meal planning has become even more difficult.
The first time I made my aunt’s chicken and rice, he instantly liked it! Since then I’ve made it a few times and started adding in a variety of veggies, and it’s now a staple in our house! Thankfully, the flexibility of using different veggies gives it all different flavors and appeases my need for variety!
The Recipe
Of course, my aunts original recipe is intended for the oven, I’ve discovered that you can make the exact same thing virtually the exact same way in the instant pot (this is the one I have), which is much more busy-family friendly.
Creamy Chicken & Rice
Equipment
- Pressure Cooker
- Stove
Ingredients
- 1 cup long grain rice
- 2.5-3 cups chicken broth
- 1 bag frozen vegetables
- 1 cup shredded cheddar cheese
- salt
- pepper
- 2 cups shredded/chopped chicken
Instructions
- Combine all the ingredients, except cheese, in an instant pot, seal, and cook on manual for 5 minutes. Complete quick release, then stir in cheese.
- Combine all ingredients in a 9×13 pan. Bake 1 hour at 350, covered.
Cooks Notes
Cook this recipe in the Instant Pot in just a few minutes or let it get happy in the oven. If you’re going to be reheating it for lunches, definitely use the 3 cups of water. Otherwise, it dries out when reheated. If your family eats it all up, you can get by with 2.5 cups of water!
This chicken & rice recipe is still a carb loaded meal, but by adding veggies, it makes it a little bit more healthy and balanced! Feel free to play with the veggies. We’ve done all green beans, all corn, and mixed veggies. They are all delicious! The best thing about this recipe is that you can play with different flavors with the veggies.
