Granola and yogurt has been one of my most favorite combos in the past 6 months! Finding gluten free granola is harder than one might think, especially in a small town! So, I developed my own recipe to enjoy with my yogurt! I hope you enjoy this Gluten-Free Harvest Granola!
Going Gluten-Free
In the past year since being diagnosed with a gluten allergy, I’ve been adjusting all of my eating. When I started on this journey, I never imagined gluten would be in some of the foods that it is! Finding a gluten-free granola in a small town is very difficult! If you can find it, you have one option! So, I decided to take matters into my own hands and create this recipe! I also love lots of fall/harvest flavors like cranberries, apples, and maple. I knew that that this combo would be great for my Harvest Granola!
On a side note, if you’re in Northern Iowa or Southern Minnesota and have any kind of food allergy, I highly recommend making the trip to Simply Nourished in Clear Lake, Iowa. This locally owned store stocks foods that meet a lot of food allergy standards! I love having it so close!
Harvest Granola
Gluten-Free Harvest Granola
Ingredients
- 1/2 cup butter melted
- 1/4 cup honey
- 3 T real maple syrup
- 1 t cinnamon
- 3/4 cup gluten-free oatmeal
- 1/4 cup roasted pepitas
- 3 T sunflower hearts
- 1/4 cup dried cranberries
- 1 cup dried apples cut into small pieces
Instructions
- Melt the butter and then whisk in the honey, maple syrup, & cinnamon
- Once combined, stir in all the other ingredients
- Spread the mixture on a cookie sheet lined with parchment paper in a single layer.
- Bake for 20-25 minutes at 350
- Let cool and then crumble and enjoy!
Cook’s Notes
- Instead of using parchment paper, use a silicone baking mat to save waste and money!
- This granola isn’t horribly sweet because of the nuts. If you want it sweeter, simply add more honey or maple syrup. If you want it less sweet, reduce the amount of sweetners!
- You can certainly change up the dried fruits if cranberries and apples aren’t your flavors! Dried apricots, raisins, etc all would be delicious!
- This granola is extra yummy served with vanilla Greek yogurt, cinnamon ice cream, or even vanilla ice cream!
- The amount of cook time is partially dependent on what you want for your granola. The longer you cook it, the crunchier it’s going to get, but be careful that the honey and maple syrup doesn’t burn!
- Once the granola is cooled, then you can break it up into pieces for your enjoyment!
