Who doesn’t love crispy skin chicken roasted with lots of flavor and moist & juicy?!
Growing up, Sunday lunch was always a big meal! It usually consisted of roast & potatoes or a baked chicken. In our house now, Sunday nights are typically a bigger meal! We frequently have our roast or chicken then! I also grew up with my dad and brother raising broiler chickens for butchering. Thankfully, my dad continues to this day! We always have a couple in the freezer. T’s favorite way to have this poultry is for it to have crispy skin!
The Recipe: Herb Roasted Crispy Skin Chicken
I have yet to roast a chicken with crispy skin and enough flavor for T’s liking, other than using the beer can technique with Cookie’s seasoning on it. He’s not a big fan, so I started doing some research on the internet on how to get crispy skin. Going to my spice cabinet was next in my planning.
I started pondering what would go well together and finally settled on a few basics and came up with a very successful recipe. I’m so proud of my chicken. It was the first time that I put spices together and had them be successful! It was also the first time that I was able to achieve that crispy skin to T’s liking! Now, it’s the only way we roast a chicken in our house!
Herb Roasted Crispy Skin Chicken
Ingredients
- 1 whole chicken thawed
- 1 stick butter melted
- 1 t parsley
- .5 t thyme
- .25 t garlic powder
- .5 t onion powder
- salt
- pepper
- 1 lemon cut in half
Instructions
- Pat the chicken dry with a tower or paper towels.
- In a small bowl, combine the melted butter and spices.
- Squeeze the juice of one half of the lemon into the melted spice butter, stirring well.
- Using a basting brush, work the entire bowl of spiced butter onto the skin of your chicken, layering it as you go.
- Place the other half of the lemon in the cavity of the chicken.
- Place the chicken in a roasting pan and bake for 1.5-2 hours at 375 degrees.
The Results
Enjoy! I hope you like it as much as we did and I guess I can roast a crispy skin chicken! I feel as though I’m slowly coming into my own as a cook and providing for my family. My mom has always been flawless at it and it’s taking me a little bit longer, but that’s ok…it’s all part of Learning as I Go.
