One thing I am passionate about, as much as I am traveling, is eating healthy. I often meal prep on the weekends to help me stay on track with a healthy lifestyle during the week. I also love cooking, so these things often collide. Breakfast is a fickle meal for me….I struggle getting in a high amount of protein, but also something that is tasty and lower fat. Recently, I developed the recipe for these Cottage Cheese Egg Bites, which are also high in protein!
Finding the Right Lifestyle
There are so many different fad diets and different kinds of lifestyles that people can get easily overwhelmed. Throw in processed foods that boast terms like “fat free”, “low fat”, “sugar free”, and more and it can get even more confusing. Regardless of which route you choose to go, make sure to choose a lifestyle, not a diet. Don’t deprive yourself of any type of food (carbs, fats, etc), don’t starve yourself, don’t live off processed foods, and most importantly if you need help, work with a professional that can help you lead a healthy lifestyle.
For me, working with a high protein lifestyle has worked wonders. Between that and picking whole foods (food in its most natural form, not processed foods) and I can truly say that I’m at my healthiest point in life (and at age 42 none-the-less).
A Protein Heavy Lifestyle
Eating a lot of protein in a day (128g) is important to me and that means jump starting my day with lots of protein at breakfast. Each one of these Cottage Cheese Egg Bites packs 7 grams of protein and only 46 calories, so you can easily eat 3-5 of them for breakfast. Starting your day with a high protein diet will help you stay fuller longer throughout the morning and jump start your metabolism. The bonus of this recipe is that it is SO EASY to put together!

Cottage Cheese Egg Bites
Equipment
- 1 Blender
- 1 Oven
Ingredients
- 1 cup fat free cottage cheese
- 12 tbsp liquid egg whites
- .5 cup pepper jack cheese shredded
- 2 eggs
- salt to taste
- pepper to taste
Instructions
- Preheat oven to 400 degrees
- Place all ingredients in a blender and blend until smooth.
- Spray a muffin pan with non-stick spray
- Fill each muffin about 2/3 full
- Bake for 15-20 minutes or until golden brown on the top
- Allow to cool in pan for at least 5 minutes then remove the bites and cool on a rack before storing in the refrigerator.

- Feel free to use different kinds of cheese in these, add veggies or even turkey bacon or sausage to amp them up even more!
- These Cottage Cheese Egg Bites can be stored up to 5 days in the fridge and reheated in the microwave. (I reheat mine for about 1.5 minutes).
- For the easiest clean-up and ease of getting the egg bites out of the muffin pan, I highly recommend a silicone muffin pan like this one!
