We’ve been through this before, I LOVE CARBS!! I especially love carbs for breakfast. It just is who I am and I’ve come to grips with it! I crave breakfast foods like cereal, muffins, cinnamon rolls, etc. I LOVE muffins! Any kind of them, I love them! What I don’t love? The calorie intake, the sugar, the fat from oil & butter, etc. Yeah, I know…all the things that make them tasty! I’ve been on the quest for a muffin that I can eat for breakfast, but not use up the majority of my calories in just 3 bites!
It is fall and the temps are getting cooler, which also means I’ve been craving my pumpkin chocolate chip bread! So not healthy!! So, the other night I decided that perhaps I could make a healthier version that wouldn’t be horrible and I succeeded.
The Recipe
Now, I’m going to be honest and say that these don’t totally taste like the full-sugar, full-fat version, but I love knowing that I’m getting lots of veggies from the pumpkin and whole grains from the whole wheat flour! Plus, they have a very fall feel and taste to them.
- 1 3/4 cups all-purpose flour
- 1 3/4 cups whole wheat flour
- 2 teaspoons baking soda
- 3 cups sugar substitue (I use a generic similar to Truvia)
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 2 cups pumpkin puree (I use can pumpkin)
- 1 cup applesauce
- 2/3 cups water
- 4 eggs
- 1-2 cups raisins (depending on your tastes)
- Combine all the dry ingredients and then add the wet, mixing thoroughly. Lastly, add raisins and scoop into muffin tin.
- Bake at 350 until done.
Cooks Notes:
- I’ve cut calories, sugar and fat by using a sugar substitute and applesauce instead of oil. If you prefer, just use the real things at the same amounts.
- I also subbed half of my flour with whole wheat flour for a little more nutrition.
- Raisins can be omitted if you aren’t a raisin fan (I’m a huge one)
- Of course, if you want to have the REALLY good version, make with full oil & real sugar and add chocolate chips instead! But, I think you’ll find these just as tasty and the pumpkin and raising are a great fall combo! Enjoy!
