The weather is turning more like fall and it’s cooling off! This time of year I always think of the yummy foods that I’ve “neglected” or opted not to eat all summer. Soups, stews, roasts, cream based casseroles…all those types of things. One of our favorites throughout the fall and winter is Taco Soup and it’s so easy and so yummy! It can be made up and put in the crock pot on low for a half day or all day. Or, you can mix it up and eat it shortly after! The greatest thing for us (other than it being super yummy)is that it makes a big batch and freezes well, so we can have it for lunches later! I hope you enjoy it as much as we do!

The Recipe
Taco Soup
An easy and delicious dump & go soup!
Ingredients
- 2 lb ground beef browned
- 1 can whole kernel corn drained
- 1 large can stewed tomatoes with lots of juice
- 1 small can chilies
- 1/2 onion diced
- 1 packet taco seasoning
- 1 packet ranch dressing mix
- 1 cup water
Instructions
- Brown your ground beef and drain.
- In a large pot, combine the corn, stewed tomatoes, chilies, onion, taco seasoning, ranch dressing mix, and water. Stir thoroughly.
- Add the ground beef
- Simmer for at least one hour.
Cooks Notes
- This soup is versatile and you could definitely customize with your choice of veggies or even beans, if you like! If you like spicier foods, simply add more chilies!
- The longer it simmers and gets happy, the spicier it tends to get!
- We love serving this soup with tortilla chips and of course, M has to have queso! It would also be fantastic with some warm crusty bread!
- Don’t have time to mix it up and let it simmer all day? That’s ok! Dump everything in your Instant Pot, set to the soup/stew function and set the time for 5 minutes! It’ll taste like it has simmered for days!
Taco soup brings back memories of the church that I worked at. They hat a Hot Dog Ministry (yes–they allied it a ministry) on Thursdays and a few years back they upped their game and added taco soup to their menu and it was a hit and stayed. I think their recipe is probably quadruple this one. 🙂 It is turning into “that” kind of weather, isn’t it???
