Creamy Chicken & Rice
This delicious and comforting chicken & rice has no cream soups!

- 1 cup long grain rice
- 2.5-3 cups chicken broth
- 1 bag frozen vegetables
- 1 cup shredded cheddar cheese
- salt
- pepper
- 2 cups shredded/chopped chicken
Combine all the ingredients, except cheese, in an instant pot, seal, and cook on manual for 5 minutes. Complete quick release, then stir in cheese.
Combine all ingredients in a 9x13 pan. Bake 1 hour at 350, covered.
