The 21 Day Fix is going well this time around! I’ve had plenty of challenges to stop me from succeeding too! Do you know how hard it is to find a “clean” meal at a basketball concession stand?! I’m proud to say that I’ve only eaten one walking taco. Other times I held out until it was over and we hit the drive through at a fast food joint where I picked the grilled chicken sandwich and only ate half the bun. I also selected apple slices instead of fries! It was brutal, but I did it! I also had a citizen bring me a plate of cookies at my full-time job! There were 8 on the plate and I only ate 2! Meal prepping has been a lot my success to this round and I’m loving how I feel inside and out!
My Creation
Now, on to this Broccoli Lemon Chicken! I can’t take full credit for it. This is definitely a similar riff on Simply Anchored’s Lemon Garlic Chicken Pasta. While I enjoyed this dish, I’ll be honest that the tomatoes didn’t quite jive on my palette, so I got to thinking. What do I love more with chicken than broccoli?! So, I thought I’d combine it and tweak the recipe a bit!
- 2 cups broccoli florets
- 1-2 boneless skinless chicken breasts
- 2T minced garlic, divided
- 1/4 cup water
- 1/3 cup + 2T olive oil
- 1 lemon
- 3 teaspoons parmesan cheese
- pepper
- 1 fist angel hair pasta
- Dice the chicken breasts into small bite-sized pieces
- In a large pan, heat 2T olive oil in a pan, add 1T minced garlic and saute until brown.
- Add the diced chicken, cooking thoroughly through.
- Add the broccoli florets and saute for about 3-4 minutes allowing parts of the broccoli to brown. Then, to the pan add 1/4 cup water and continue cooking with a lid on the pan.
- In another pan, cook the pasta and set aside.
- In a small dish combine the juice of one lemon, 1/3 cup olive oil, and 1 T minced garlic.
- Once the broccoli is cooked, add the cooked pasta to the pan and add the lemon/oil mixture.
- Stir together and season with pepper.
- Finally, sprinkle the pasta with the parmesan cheese.
This recipe has bright flavors with the lemon and broccoli, the parmesan and pepper adds the extra bit! I can’t wait to have the rest for lunch the next few days and continue to experiment with clean recipes for my meals! Give it a try, I think you’ll like it!
