The boys (all three of them) in my house are picky. As a result, when I find a recipe that is a hit in our house, it becomes a staple. This One-Pan Rotel Hotdish is one of those! While, I don’t like to eat the same thing over and over and over (unless it’s a good brownie and milk), T eats the same things over and over!! As a result, I’ve been making this for a couple years now and while the original recipe was a great Pinterest find, I have tweaked it to make it my own!
- 1lb ground beef
- 1 tablespoon oil
- 2 teaspoons minced garlic
- 1/2 onion – chopped
- 3 cups dry Rotini pasta
- 2 cups water
- 2 cups beef broth
- 15 ounces tomato soup
- 1 1/2 teaspoons chili powder
- 1 can Rotel, drained
- In a large, deep pan, brown the hamburger and drain the grease.
- Sautee the garlic and onion in the oil until translucent.
- To the pan, add the water, beef broth, and pasta. Bring to a boil and cook until most of the liquid is absorbed and pasta is tender.
- Stir in the tomato sauce, Ro-Tel, and chili powder.
- Heat through and serve!
T isn’t a fan of casseroles loaded up with cream soups, so this meets that criteria. He also likes dishes with a little spice and it definitely meets that criteria as well! The chili powder is adjustable to your heat desire! I like it because it can be easily thrown together and doesn’t require the oven! It also sneaks some tomatoes into their diets, which they normally won’t eat. I make this frequently for T and put it in separate containers for his lunches and it freezes very well! I hope you enjoy it as much as we do!
