I love weekends because I usually don’t have to set my alarm clock! I love weekends because I get to drink coffee out of my favorite mug! I also love weekends because I get to lounge around for at least an hour in my sweats with said coffee mug! But, most of all, I I love weekends because I get to actually make breakfasts! No grabbing something on the go on the way to work on weekends!

We’ve been here before, I’m always looking to find a breakfast casserole that T likes! Either they are too eggy or to dry or too….I don’t even know anymore! What I do know is that I love ordering skillet breakfasts when we go out to eat, so I decided to try and create that in a casserole and I achieve it with this Tator Tot Breakfast Casserole.
The Recipe – Tator Tot Breakfast Casserole
Tator Tot Breakfast Casserole
Ingredients
- 8 slices bacon fried & chopped
- 1 cup shredded cheddar cheese
- 4 eggs
- 1.5 cup milk
- tator tots
- salt
- pepper
- chopped veggies (optional)
Instructions
- Preheat your oven to 350 degrees
- Grease a 11×7 pan
- Spread one layer of tator tots in the bottom of the pan and season with salt & pepper
- Beat the eggs and milk and season with salt & pepper, pour over tater tots
- Top the egg mixture with crumbled bacon and shredded cheese
- Bake at 350 for about 30 minutes or until the center is set.
- Let stand for at least 5 minutes before serving
Cook’s Notes:
- By using tater tots, it is super easy to mix up, no preparing a crust or cutting bread, etc. The edges of the tator tots get kind of crispy, but when mixed with the egg, they absorb extra moisture! It’s a great marriage.
- Seasonings – You could definitely play with different seasonings! We like using Crazy Jane’s with eggs, so that would be yummy as well!
- The amount of bacon is up to you. I used what I had which was 8 slices of bacon! We love bacon, so it is always our go-to for breakfast! You could easily use diced ham or even crumbled sausage as well!
- This recipe reheats incredibly well and is almost better the second day!
- This is not a super eggy casserole as that’s not what we like!
