Apple Crunch Muffins

These slightly spiced, but super sweet and crunchy muffins are perfect for fall or anytime!

Ingredients
  

  • 3 eggs
  • 2 cups sugar
  • 1.5 cup oil
  • 2 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • chopped apples
  • 2 tablespoons butter melted
  • 1/2 cup brown sugar
  • 2 tablespoons quick oats
  • 1 tablespoon flour

Instructions
 

  • Beat your eggs until foamy and then gradually add sugar
  • Blend in oil & vanilla
  • Add flour, salt, & baking powder
  • Finely Chop the apples, add desired amount to batter
  • Grease a muffin pan and fill each cup about 2/3 full
  • Melt butter and combine with brown sugar, quick oats, and 1 tablespoon flour
  • Top each muffin with a small spoon full of chopped apples & crumb mixture
  • Bakat at 350 for 20 minutes or until golden
