Apple Crunch Muffins
These slightly spiced, but super sweet and crunchy muffins are perfect for fall or anytime!

- 3 eggs
- 2 cups sugar
- 1.5 cup oil
- 2 teaspoon vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- chopped apples
- 2 tablespoons butter melted
- 1/2 cup brown sugar
- 2 tablespoons quick oats
- 1 tablespoon flour
Beat your eggs until foamy and then gradually add sugar
Blend in oil & vanilla
Add flour, salt, & baking powder
Finely Chop the apples, add desired amount to batter
Grease a muffin pan and fill each cup about 2/3 full
Melt butter and combine with brown sugar, quick oats, and 1 tablespoon flour
Top each muffin with a small spoon full of chopped apples & crumb mixture
Bakat at 350 for 20 minutes or until golden
