Cottage Cheese Egg Bites

Ingredients
  

  • 1 cup fat free cottage cheese
  • 12 tbsp liquid egg whites
  • .5 cup pepper jack cheese shredded
  • 2 eggs
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat oven to 400 degrees
  • Place all ingredients in a blender and blend until smooth.
  • Spray a muffin pan with non-stick spray
  • Fill each muffin about 2/3 full
  • Bake for 15-20 minutes or until golden brown on the top
  • Allow to cool in pan for at least 5 minutes then remove the bites and cool on a rack before storing in the refrigerator.
