T has decided that cucumbers are one of his favorite things to grow in the garden now! Last year I had 2 plants in our garden and it was the perfect amount! This year, I think I have at least 6! So, because of that I’ve been eating cucumbers for quite some time now! I love having a garden with fresh produce for many reasons! Of course nothing is better than garden fresh green beans, but we’ve frozen our own green beans for this coming winter as well. I’ve shared a ton of green beans with friends & neighbors. I’ve put chopped red onions in the freezer for the future and we use our potatoes as we need them!
Developing the Recipe – Zesty Creamy Cucumbers
Because of T’s recent obsession with growing cucumbers (note: he only grows them, he does not eat them until they’ve been pickled..In fact, I’m the only one in our house who eats them prior to being pickles), I’ve put a lot of cucumbers away in my belly this summer! I’ve eaten traditional creamy cucumbers (A LOT), eaten them sliced with ranch, and canned 2 jars of pickles! Because of the sheer quantity that I’ve eaten, I wanted to try something just a little different! I NEEDED to try something different! I love my creamy cucumbers, but felt like I needed a little zip in my traditional recipe and so I gave it a whirl and I think it was a success!
Zesty Creamy Cucumbers
Ingredients
- 2 cucumbers
- 1/3 cup mayonnaise
- 1 T lemon juice
- 1 T sugar
- 1 T mustard
- pepper to taste
Instructions
- Peel & slice cucumbers in desired size and thickness
- Whisk together all other ingredients in a small bowl
- Pour dressing over cucumbers and stir thoroughly
- Allow to chill in the fridge for at least 2 hours before serving
Cooks Notes:
- This recipe definitely has a zesty and slight bite to it, but I think it’s a great variation and keeps the sweetness at bay!
- One could easily add fresh onions to this recipe.
- I enjoy just a few diced cherry tomatoes on the top!
- Substitute honey for your sugar to avoid processed sugars!
