Pepper Jack Egg Bake – The Recipe
I love a good variety of egg bakes, but my house is pickier than I am. T, specifically is a tough critic, so when he does approve of a recipe, I know it’s definitely a keeper! Recently, I made this Pepper Jack Egg Bake and he actually asked for the leftovers to have during the week! SUCCESS!
Pepper Jack Egg Bake
Ingredients
- 3 cups shredded hashbrowns slightly thawed
- 1/4 cup melted butter
- salt
- pepper
- 3 eggs
- 1/2 cup heavy whipping cream
- 1.5 cups chopped ham
- 2 cups shredded pepper jack cheese
Instructions
- Place the hash browns in the bottom of 9×13 pan, press down, and press with paper towel to remove excess moisture
- Pour the melted butter evenly over the hash browns and season with salt and pepper
- Bake the hash browns for 25 minutes at a 425 degree oven, remove
- on top of the hash browns distribute the ham and cheese evenly
- in a bowl, beat the eggs, heavy whipping cream, and more salt and pepper together and pour over the ham and cheese
- bake for 25-30 minutes at 350 degrees
- let cool for 15 minutes, enjoy

Cooks Notes:
- I purchased the “mild” pepper jack cheese to use in this and I did it for two reasons: 1) I don’t always like super spicy things and I wanted to enjoy this egg bake! 2) The mild version was the only kind my grocery store had, so that settled that issue!
- You can use half and half or milk if you don’t have heavy whipping cream! Don’t let that detail deter you from mixing this up!
- Bake it about 5 minutes longer than you think you need to! It’ll start browning around the edges nicely, but it’ll need a few more minutes to get the center completely set!
- Let the casserole set for at least 5 minutes after removing it from the oven before eating it!
- I highly recommend serving it with fresh fruit, but I think anytime you eat, it should include fresh fruit!
I hope you enjoy this recipe and it becomes a staple in our house as I know it will be in ours! It reheats wonderfully and doesn’t taste like all other egg bakes!
