“Stand”

Do you ever hear one of those songs that takes you back to a point in your life…good or bad? That was me this morning driving to work. I popped in a Rascal Flatts CD (yes, I still have CD’s and yes, I still listen to them) into my player in the car and prepared to jam all the way to work. Instead..the first song brought me to tears. Tears of memories, tears of gratitude, tears of joy.

That song was “Stand”.  The reason it brought me to tears?  That song had become my personal anthem about 9 years ago.  You see, I had broken off an engagement and moved home…starting over on my own.  I was in a relationship that, at the time, I thought was great!  I thought he loved me, although he struggled with ways to show me.  He never abused me, never verbally abused me..he just didn’t love me the way I needed to be loved and didn’t give me what I needed in a relationship.  While it was the hardest decision of my life (weeks of sleepless nights, endless days & nights of crying and sobbing) and learning how to be “alone” again…I knew it was the best decision for me and him, to be honest.

Pumpkin Raisin Muffins

We’ve been through this before, I LOVE CARBS!! I especially love carbs for breakfast. It just is who I am and I’ve come to grips with it!  I crave breakfast foods like cereal, muffins, cinnamon rolls, etc.  I LOVE muffins!  Any kind of them, I love them!  What I don’t love?  The calorie intake, the sugar, the fat from oil & butter, etc.  Yeah, I  know…all the things that make them tasty!  I’ve been on the quest for a muffin that I can eat for breakfast, but not use up the majority of my calories in just 3 bites!

It is fall and the temps are getting cooler, which also means I’ve been craving my pumpkin chocolate chip bread!  So not healthy!!  So, the other night I decided that perhaps I could make a healthier version that wouldn’t be horrible and I succeeded.

Ground Beef Stroganoff: 2 Ways

Growing up my mom made everything homemade and from scratch and Ground Beef  Stroganoff was one of those meals! I honestly can’t think of anything that we ate that came from a box or a jar (from a grocery store). In the many years that I was single I also started making things from scratch and putting my own spin on things.  Then, I met T and the boys.  What they were used to was frozen lasagna, Hamburger Helper, Ragu spaghetti sauce, and other types of foods similar to this and when you love someone you eat certain foods and you cook certain ways.

Racing for a Night of Fun at the Knoxville Raceway

T and I were lucky enough to win tickets to the Knoxville Raceway Sprint Car Nationals recently as a part of Travel Iowa‘s #HackMyHoliday contest this past winter! Thanks to the National Sprint Car Hall of Fame & Museum we were gifted with 2 Clubhouse level tickets to the races Wednesday through Saturday!  Honestly, we had no idea what this all involved, but T was especially excited as he’s always wanted to see the Sprint Car races.

Planning our Visit

Bob from the Hall of Fame & Museum emailed me early on to communicate with me and welcome me to the event (and when I say early, I mean in January).  He gave me a run-down of how things went and graciously answered any and all questions I had…even though I’m sure he thought I was clueless at some point (which, I clearly was)!  He helped point us in the direction of lodging and gave us a timeline for the events of the nights we would be attending!  Unfortunately, due to lack of vacation days at work, we were unable to attend Wednesday & Thursday night, but we headed down on Friday (and had intentions of attending Saturday night, but I didn’t feel well, so we just hung in the camper)!

September Comments For A Cause: Franklin County Youth for Christ

I know it’s been a few months since I participated in Comments for a Cause, but I always want to make sure that if I’m giving, it’s from the heart and for a cause that I feel strongly about. The other day I was driving to work and listening to our local radio station.  Every day about 7:35 they play a segment called “Lighten Up & Live with Ken Davis.”  If you don’t know who Ken Davis is, he’s a Christian comedian who is hysterical!  (My dad and I actually both listen and often text or call each other about his laugh for the day!)  Every day they play this segment, which is just a 30 second – 1 minute story or comedy routine that is humorous, but also has a spiritual message to it!  This segment is sponsored by Compassion International and brought to us local listeners by Franklin County Youth for Christ…and, as I was listening the other morning it came to me…they would be the recipient of my next Comments for a Cause.

Shepherd’s Pot Pie

Shepherd’s Pot Pie

Digging through the freezer and cupboards trying to figure out what to make for supper can sometimes be a challenge.  Recently, as T and I were pondering this specific quandary, I came across Val of Corn, Beans, Pigs, & Kids recipe for Shepherd’s Pie.  We tried this a few months back and enjoyed it, but I also know T well enough to know that he likes something with a bit more substance to it (Val’s recipe is broth based).  I also know how much he loves pot pies, so I decided to combine both and come up with my own recipe.
