Rotel Hotdish: A One Pan Meal

Rotel Hotdish is an oldie but goodie in our home and has previously been here on the blog as one of my very first recipes.  Because of this, it was rough around the edges and so I knew it was time for a refresh and update…not only to the pictures, but to the recipe as well.

The boys (all three of them) in my house are picky.  As a result, when I find a recipe that is a hit in our house, it becomes a staple.  This One-Pan Rotel Hotdish is one of those! While, I don’t like to eat the same thing over and over and over (unless it’s a good brownie and milk), T eats the same things over and over!!  As a result, I’ve been making this for a couple years now and while the original recipe was a great Pinterest find, I have tweaked it to make it my own!

I’m not sure there isn’t a woman in today’s world (or probably ever) that hasn’t thought this!  Do I need a therapist?  Am I just being a normal neurotic woman?  Am I really ready to go off the deep end?  Would the therapist just laugh at me and say “this is life sweetie, deal with it”?  Lately I’ve found myself thinking these things.  I’ve thought this for several reasons, so hang on…

I’m Guilty…Are You?

I will admit that I’m guilty. I’m guilty at looking at my phone too much! I’m guilty of spending too much time at night on my iPad. I’m guilty! The other day Val of Corn, Beans, Pigs, & Kids wrote a post about committing to spending less time on her smartphone. She referenced an article that said more than 50% of kids think their parents are disctracted by their phone. That dug at me a little and then I saw this video that a friend shared on Facebook.
