I think it’s safe to that summer is officially here in Iowa and this guilt free strawberry freeze is perfect for the warm days!  It’s been in the steamy 90’s the last three days and call me crazy, but I’m already over it!  I’m already tired of sweating!  I’m already tired of not being able to have the windows open, but it is Iowa, so I’m not sure what I expect anymore!  But, I digress…it’s summertime and here in our home, we are in full baseball, camping, and summer mode!  The boys have work, summer school, weight lifting, baseball, etc.

I’m trying to eat clean throughout all the summer fun/business, I really am!  And one thing I’ve found since eating clean is that my system can’t handle high sugar, high fat things any longer.  My gut can’t seem to process it and I end up feeling awful!  However that hasn’t stopped me from having cravings.   And as it’s gotten to be so warm here, I just want ice cream!! I want ice cream, strawberries, and chocolate! Not a bad combo, right?? So, how can I accomplish this without throwing all my clean eating efforts away?? I came up with this treat, Guilt Free Strawberry Freeze!

Ultimate Mashed Potatoes

Anyone else have those leftover meats in your freezer that you must use, but are always at a loss of what to do?  We’ve had that quite a bit lately and specifically ham!  We had left over ham from Christmas and then added another container of left over ham from Easter.

While we love ham (just eating it plain), we had done that a couple times and were looking to reuse it another way!  T was actually the one who suggested chopping it up and putting it in my twice baked potatoes.  Then for ease, I added a few other items and the seasoning to make them into ultimate mashed potatoes.  We’ll get to these potatoes in a minute, but first let’s talk about weekends for a second.

Weekends are a funny thing, aren’t they??  You spend the majority of the week waiting anxiously for them and then once they are over, you are either glad to get back to a routine or realize it went so fast, you can’t really remember what you did!

This past weekend was a rare one where we didn’t have 15 things that we “had” to do. Oh don’t worry our list of “to do’s” was plenty long as we hadn’t had much time the last several weeks to focus on home, but only one place to go and one thing we had to do which was a baseball game for M on Saturday night.  Knowing it was going to be cold and windy, I decided we were going to need a hearty meal to fill our bellies and help keep us warm during the game, so that led us to where we are now.

I’m excited to introduce you to my One-Pan Italian Skillet, but we’ll get to that in a minute…

It’s May?!  How the heck did that happen?  Could someone please find April and send it back to me??  Good gravy that month went fast and I know it’s because I spent 75% of it at track meets, which is fantastic because I love trackwatching anything the boys are involved with, but dang it was busy and I feel like this site suffered because of it.  The reality is that it probably did suffer…lack of new posts, etc. but the other reality is that is where my life is right now and I knew something had to give and I also knew that you would all understand and appreciate the fact that I was focused on my guys!  So, thank you for your graciousness and patience…it is much appreciated!

You know how you feel when you find that one special item that makes your heart soar and give you such a “high”? Well, that’s how I feel about my Power Chef from Tupperware and to be honest, also how I feel about this veggie egg bake I’ve been obsessing over for the last couple weeks that I just had to share it with you!

As someone who gets up early in the morning to work out, I need a hearty breakfast filled with protein and substance!  I recently found these Cheesy Cauliflower Muffins and tried them and loved them so much that I decided to riff the recipe and come up with my own…backing off the cheese and amping up the veggies to make it even more healthy!

Bread pudding has always been one of my very favorite desserts! If it’s on a menu, I’m trying it! One of my most favorite things about living in rural Iowa is that when you help someone they are bound to repay you in food!  It’s our “thing”!  It’s the same if someone dies, has a baby, gets seriously ill, etc…we bring food!

So, after helping a friend of mine and T’s the other day, he showed up with food: three bags of frozen (farm-fresh) black raspberries!  YUMMO!!  These raspberries got my mind turning wondering what wonderful thing I could make with them.  My friend Sara at Travel With Sara has recently spent time taking the Bread Pudding Challenge along the shores of the Alabama Beaches and my love for this sweet dessert. Now, the rest is history and I bring you: Raspberry Cream Cheese Bread Pudding!

Hang with me as there may be a string of healthy recipes (hence another recipe this week…this time Banana Cherry Chewy Granola Bars). It’s where my life is right now! I actually have the time (basketball season is over and track hasn’t started yet) to focus a little bit more on me, which means working on making healthy whole food taste better than the processed junk!  I’m in my 3rd round of the 21 Day Fix and it’s tough getting back into the swing of things, but I am quickly reminded at how much I can eat when I eat the good stuff!  Seriously…check out that collage of pictures!  That’s the meals I’ve been eating this past week!!

Honey Glazed Coconut Almonds

Eating healthy and having an extreme sweet tooth is a challenge!  I can easily fall prey to revel bars, chocolate chip cookies, and ice cream.  Eating healthy is especially important right now as I’m participating in the Live Healthy Iowa 10-Week Challenge with a team of other Iowa Bloggers (check out more here)!

The Recipe

Thankfully, I’ve found a few healthy items that can fulfill that sweet-tooth as well like my honey apple fries!  Not long ago, I was able to satisfy that sweet tooth with these Honey Glazed Coconut Almonds!  They are just enough sweet without being too sweet and made with all “whole” ingredients!

Chicken & Broccoli Wild Rice Soup

On snow days, I love to cook! I love to cook new things and bake! A few days ago we had the Blizzard of 2016! In that one day that I was home, I made Taco Soup, Beer Bread, and Cristen’s Oatmeal Chocolate Chip cookies, and mixed up this easy and delicious new recipe, Chicken and Broccoli Wild Rice Soup!

The Recipe

I love rice, I love Wild Rice, and I love chicken.  I love broccoli, so why not put them all together, right?  This recipe is super easy, full of flavor, and packed with things that are good for your body like protein from the chicken, veggies, and the rice isn’t too shabby either!  The best part?  It’s easy!!  And by now, we all know how much I love a good and easy recipe!

Sweet & Smokey Baked Beans

How do you celebrate birthdays in your family?! Do you do big parties with lots of presents? Do you pretend that the day does’t exist at all?  In our family, it means getting together and spending some time eating and having fun together!

Family Birthdays!

Recently, we got together with my mom & step-dad to celebrate my step-dads birthday which is coming up shortly! Ribs and brisket were picked as the meat of choice. I then decided that we were going to have a full-on barbecue!  So, I quickly started planning the rest of the menu!

In the end, we feasted on ribs prepared by the way of Jeni Eats, brisket prepared by the way of the Iowa Beef Council, mashed potatoes & gravy, sweet corn (from our freezer), and my Sweet & Smokey Baked Beans!  Of course we had to follow that up with Chocolate Chip Cookie Dough Cheesecake!  YUM!  It was all so good!
