Growing up my mom made everything homemade and from scratch and Ground Beef Stroganoff was one of those meals! I honestly can’t think of anything that we ate that came from a box or a jar (from a grocery store). In the many years that I was single I also started making things from scratch and putting my own spin on things. Then, I met T and the boys. What they were used to was frozen lasagna, Hamburger Helper, Ragu spaghetti sauce, and other types of foods similar to this and when you love someone you eat certain foods and you cook certain ways.
The Recipe: Ground Beef Stroganoff
Over the years I’ve slowly transitioned the boys and T to my mom’s lasagna and homemade spaghetti sauce. That has worked so successfully that T believes no other lasagna exists anymore. R says that Granny’s spaghetti sauce is the best! One of the things that I haven’t been able to work out of their meal repertoire is Hamburger Helper.
I love ground beef stroganoff and always have. My mom made it homemade from scratch, the last several years I’ve been eating it in the Hamburger Helper format. As of tonight that stops! Therefore I’m proud to say that tonight I was able to master a batch and T has given me permission to make it from scratch from this point forward! (Can I get an AMEN?!)
Ground Beef Stroganoff
Ingredients
- 1 lb ground beef
- 1 can cream of chicken soup
- 1 cup sour cream
- 1/4 cup water
- 1/2 teaspoon beef soup base
- 1/2 teaspoon garlic powder
- diced onion
- 1 tablespoon butter
- 1 tablespoon dried parsley
- salt
- pepper
Instructions
- Brown ground beef and drain off fat
- dice your onion and saute it in the butter in a deep sided skillet
- once onions are translucent, add the rest of the ingredients stirring together
- Cover and let simmer
- While the stroganoff is simmering, cook a pasta of your choice. Drain the pasta once cooked and serve stroganoff over the pasta.

Instant Pot Version
I promised you Ground Beef Stroganoff two ways, so here it is. This recipe is just as good and very simple made in the Instant Pot.
Instant Pot Ground Beef Stroganoff
Equipment
- Instant Pot
Ingredients
- 1 lb gound beef browned
- 1 can cream of chicken soup
- .5 cup diced onion
- 1 Tbsp dried parsley
- 1 cup dry pasta
- 2 cups beef broth
- 1 tbsp butter
- 1 cup sour cream
Instructions
- Brown the hamburger and drain
- Set the Instant Pot to saute and melt the butter in the bottom and saute the onions until translucent
- Change the Instant Pot to manual and add the ground beef, soup, broth, parsley, and pasta. Seal pot and set manual timer to 3 minutes.
- Once timer has gone off, quick release the pressure. Remove lid and stir in sour cream
Beef strogonoff is one of our favorite meals!
