I’m a little over half-way through the 10-Week Live Health Iowa challenge and it’s continuing to push more to be more active and eat better than ever! A misconception of eating healthy is that is has to be involved, complicated, and take a long time. I have to admit that I probably even thought that a time or two in my adulthood too! But, thankfully I know now that this isn’t true!! So, I have for you 20 Easy Healthy Meals & Snacks!
Breakfast:
- Whole Wheat Waffles (or pancakes) with fresh fruit.
- Bacon & Egg Muffins
- Hard Boiled Eggs
- Apple Cinnamon Baked Oatmeal
All of these can be made up ahead and frozen and reheated when needed. This really helps to cut down time in the morning and also makes them portable to work, school, etc.
Lunch:
- Turkey Lettuce wraps
- Salad with tuna and chunked chopped veggies
- Taco Lettuce Boats
- Whole Wheat Turkey Sandwiches with lots of veggies
- Southwest Taco Salads
My trick for lunch is think light and fresh. Especially when working or attending school, you don’t want a heavy meal that’s going to weigh you down the rest of the day!
Supper:
- Chicken & Broccoli Wild Rice Soup
- Grilled Lean Meats
- Steamed Vegetables
- Bacon Wrapped Chicken
- Turkey Meatball Spaghetti
- Skinny Shepherd’s Pie (not clean, but a healthier version)
- Spring Veggie Soup
- “Candied” Sweet Potatoes
The greatest thing about the majority of these meals and recipes is that you can prepare them and enjoy them for supper and put them in the freezer for lunches!
Snacks:
- Honey Glazed Coconut Almonds
- Broiled Granola Grapefruit or Apple Honey Fries
- Apple sliced with 1 T of nut butter drizzled over it
Just because we’re eating healthy doesn’t mean we can’t snack, right?

I love a good bowl of popcorn as a snack or baby carrots and hummus. Yum. Any grilled chicken type entree is a win for me especially when it is paired with fresh roasted veggies like asparagus or broccoli/cauliflower. Yum. Fun giveaway,Katy!

A favorite quick snack at our house: popcorn!
We’ll (wife and I) will enjoy roasted/grilled veggies as a side with almost anything, and in the summer time, cucumber flavored water, yum!

I love hummus and hard boiled eggs as snacks. I liked your idea of cutting up the eggs and putting them on a sandwich instead of making egg salad. Spent a lot of time on Monday prepping vegetables, eggs, etc. Fun to have healthy foods to grab or work into dishes. Thanks for sharing your recipes!
