Since starting on the #21DayFix a little over 21 days ago (read my thoughts about it HERE), I’m making a valiant effort to refine the way I eat all together (not just when I’m on the “Fix”). One of the meals that is hardest for me to eat “whole” or “clean” is breakfast! So, the other day when I found this baked oatmeal recipe by SkinnyTaste, I was ecstatic to give it a try and after consulting with Coach Shannon, I got confirmation that this was an acceptable food and I set off to bake it. Despite being delightfully yummy and filling on a cold day, it got my wheels turning to other combinations that I could try! (Stay tuned because there WILL be more coming).
The Recipe
So, on a cold wintry day, I set out to make Apple Cinnamon Baked Oatmeal.
- 2 apples
- splash of lemon juice
- 1 cup Old Fashioned Oats
- 3/4 teaspoon cinnamon, divided
- 1/8 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1 egg
- 1 1/4 cup milk
- 1/4 cup honey
- 1 teaspoon vanilla
- 1/4 teaspoon almond extract
- Peel, core, and slice both apples.
- Spray a 9×9 baking dish with no-stick spray.
- Layer sliced apples in the bottom of the baking dish and splash them with lemon juice and sprinkle with 1/4 teaspoon of the cinnamon.
- Cover and bake for 20 minutes at 375.
- In a small bowl, combine oats, cinnamon, nutmeg, & baking powder.
- In another small bowl, whisk together the milk & egg, add the honey and whisk until fully blended, then whisk in vanilla & almond extract.
- Remove the apples from the oven and sprinkle the oat mixture over the top.
- Then, slowly and evenly pour the milk/honey/egg mixture over the top of the oats covering it evenly.
- Bake at 375 for 30 minutes (uncovered) or until gold brown.
Cooks Notes:
- When slicing the apples, feel free to chop them or slice them as thinly or as thick as you prefer. If they are thick cut, you may need to extend your preliminary baking time by a few minutes. You want the apples to be just tender when poked with a fork!
- Consider using one apple and one pear or two pears for a slightly different, but absolutely delicious flavor!
- While any honey will do for this recipe, using a local bee-keeper is fantastic.
- After pouring the milk mixture over the oats, you may need to press down on the floating oats to make sure they are all saturated by the liquid as to fully bake!
- Eat warm or store in reheatable containers in the fridge and reheat for breakfast! (I may or my not have heated up a portion the night I made this and had it with a small dollop of vanilla ice cream! That is totally not #21DayFix approved, but still a much healthier alternative to apple crisp!
