Anorexia & How It Rules My Life, Part 3
If you follow my blog, you know that I had written 2 different posts about how Anorexia and my struggle with it. You also know that those entries were back in February! (You can find Part 1 & Part 2) That is due to the fact that Part 3 is the hardest to write (I’ve actually been “at this” for a month now, trying to write & share it)! This part is how anorexia still rules my life every day even though I try hard to not let it!! I know what a lot of people say, “if you know it’s in your head and wrong, then just don’t listen to it!” Have you ever said that to an alcoholic or a cocaine addict? It’s the same concept. I know I shouldn’t let it rule my daily life, I know that I shouldn’t obsess over what I look like, how much I weigh, what size clothes I wear, but the reality is…I do.

An Afternoon Off
A couple weeks ago I got the joy (well, sorta) of having an unexpected afternoon off. Strong storms went through our area and knocked down quite a few power lines and we didn’t have electricity at work. Being the good employee that I am, I reported to work at my normal time, did what I could in the dark and then sat there…finally, after talking with my supervisor, we decided to close the office for the rest of the day and I headed home. So, there I sat… I honestly can’t remember the last time I had a day, or even a couple hours off work where I didn’t have something else planned (time with the boys, traveling to a game for the boys, leaving on vacation, appointments etc).
Strawberry Stuffed French Toast with a Twist

The Recipe
A couple weeks ago on the weekend, I was hungry for something other than our regular weekend breakfast of pancakes. I had some fresh strawberries and I can’t resist a good stuffed french toast, but had one main problem: no cream cheese! Which, I honestly was okay with because I wasn’t interested in consuming all those calories of the creamy goodness, but…the thought of stuffed french toast made me incredibly hungry! So, as I stood at my fridge the wheels began to turn. I pulled out a few ingredients and here is what I ended up with.
Tuesday On The Town in Hampton, Iowa
I’m so lucky to call this place my hometown! For a town of about 4000 people, they sure do have a lot going on! Recently, I got to be a part of their Tuesday on the Town celebration during the Erica Nicole concert! Tuesday on the Town is a town celebration they have each Tuesday in the month of June. There is a free-will donation meal (with proceeds donated to a good cause), a country concert free to the public, vendors available to do some shopping, and then their Municipal Band (world famous if you ask anyone from Hampton) plays their weekly concert! All free, for anyone who wants to attend…a Hampton resident or not!!
Last Tuesday Nashville recording artist, Erica Nicole visited Hampton for not the 1st time, not the 2nd time, not even the 3rd time, but for the 4th time in her career! Can I just say, “WOW!” That girl has got some pipes on her! Humble and down to Earth as well. She not only can sing, but expresses her love for music and the people who have supported her throughout the journey!

I got the privilege of growing up on a farm, learning the “way” of the farmer and with that learning a lot about the process over time and where we came from along with the hard work ethic and the harsh reality (or at least harsh when I was 10) that we didn’t need video games (even though I BEGGED my parents for a Nintendo when they first were launched) because we had the outside and “working on the farm!”
