Strawberry Stuffed French Toast with a Twist

I can eat breakfast for every meal and this Strawberry Stuffed French Toast is no different!  Its sweet, savory, and absolutely delicious!

The Recipe

A couple weeks ago on the weekend, I was hungry for something other than our regular weekend breakfast of pancakes. I had some fresh strawberries and I can’t resist a good stuffed french toast, but had one main problem: no cream cheese! Which, I honestly was okay with because I wasn’t interested in consuming all those calories of the creamy goodness, but…the thought of stuffed french toast made me incredibly hungry! So, as I stood at my fridge the wheels began to turn. I pulled out a few ingredients and here is what I ended up with.

Ingredients
  • 1 cup vanilla Greek yogurt
  • 1 T corn starch
  • 1-2 T powdered sugar
  • chopped strawberries
  • 2 slices bread
  • butter
Instructions
  1. In a small bowl combine the Greek yogurt, corn starch, and powdered sugar.
  2. Whip together with a whisk. Depending on the kind of yogurt you use, you may need a little more corn starch for thickening.
  3. Stir int he chopped strawberries.
  4. Butter one side of each slice of bread
  5. Fill the sandwhich with the filling (butter side out) and fry in hot pan (similar to grilled cheese).
  6. Sprinkle with powdered sugar

My concoction ended up being quite delicious!  It wasn’t quite as sweet as traditional stuffed french toast and a lot less messy without the egg wash, etc.  I found it to be filling, but not heavy as other recipes made with cream cheese.  The next time I will probably use a bit more corn starch to thicken it and maybe even mix the cream up the night before to allow it to “stand up” over night in the fridge.  I also can’t wait to try this with a variety of fresh fruits!  Give it a try and let me know what you think!

    1. No problem! I hope you like it! It was definitely a nice surprise to realize I could make it without cream cheese!! I’m sure flavored yogurt would make it amazingly yummy too!!
