I can eat broccoli and roasted is where healthy eating is at! I enjoy a large variety of vegetables in almost anyway shape or form. I’m also constantly looking for new ways to enjoy them so I will eat them more! While the majority of my posts revolving around #TastyTuesday are family meal centered, I like to throw a healthy recipe in every now and then! The other day I made this and it was so delicious that I knew I had to share it with you all!
Benefits of Broccoli
Broccoli has so many great benefits for overall health including providing dietary fiber, minerals, vitamins, and antioxidants. It also happens to be low in calories if cooked correctly! It also is rich in Vitamin A & C! While steaming it is probably the healthiest way to eat it (cooked), you can easily “jazz it up” with a few simple steps and still reap the benefits of its vitamins & nutrients have lots of flavor! Here is how I did it!
- 2 cups fresh broccoli
- 1/8 cup olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- salt
- pepper
- Cut your broccoli into bite sized pieces and place in a plastic bag or bowl.
- In a small bowl, mix the rest of the ingredients and pour over the broccoli, thoroughly coating.
- Bake at 350 degrees for 20-25 minutes.
Cooks Tips
- Bake your broccoli on a parchment paper lined cookie sheet for easy clean up and so the broccoli won’t stick to the pan while baking.
- Baking time can vary depending on how “done” you like your broccoli! I like cooking it long enough that the end start getting slightly overdone, it adds (what I think) is a great crunch!
Adding this delicious side dish to some baked or grilled chicken or fish is a great way to get your greens and protein in without loading it up on calories (with butter or cheese sauce)! Check it out and let me know what you think!
