Banana Cherry Chewy Granola Bars

Hang with me as there may be a string of healthy recipes (hence another recipe this week…this time Banana Cherry Chewy Granola Bars). It’s where my life is right now! I actually have the time (basketball season is over and track hasn’t started yet) to focus a little bit more on me, which means working on making healthy whole food taste better than the processed junk!  I’m in my 3rd round of the 21 Day Fix and it’s tough getting back into the swing of things, but I am quickly reminded at how much I can eat when I eat the good stuff!  Seriously…check out that collage of pictures!  That’s the meals I’ve been eating this past week!!

Honey Glazed Coconut Almonds

Eating healthy and having an extreme sweet tooth is a challenge!  I can easily fall prey to revel bars, chocolate chip cookies, and ice cream.  Eating healthy is especially important right now as I’m participating in the Live Healthy Iowa 10-Week Challenge with a team of other Iowa Bloggers (check out more here)!

The Recipe

Thankfully, I’ve found a few healthy items that can fulfill that sweet-tooth as well like my honey apple fries!  Not long ago, I was able to satisfy that sweet tooth with these Honey Glazed Coconut Almonds!  They are just enough sweet without being too sweet and made with all “whole” ingredients!

21 Day Fix Approved Foods

I’m in the final week of my first 21 Day Fix and while I haven’t followed it to a T (due to family Christmas dinners), I’ve followed it exactly every other day of the week that those dinners don’t happen on and I’ve had fun “playing” with my food.  I found 3 21 Day Fix approved variations on foods that I thought were so great, I wanted to share them with you!  Even if you aren’t on the 21 Day Fix diet, these are great “whole foods” to feed your body and just plain delicious!!  Here are my 3 favorite current dishes!

Shredded Beef Tostadas

Shredded Beef Tostadas

I’m obsessed with these Shredded Beef Tostadas.

A couple of weeks ago I asked some of my blogging friends for recipes using roasts. You see, we get beef a half a cow at a time from farmers that we know well. We have it taken directly from their farm to our favorite locker (Lewright Meats in Eagle Grove, Iowa) and then it all comes home and fits (almost perfectly) in our upright freezer!  For some reason we seem to have a lot of “extra” roasts, so I’ve been trying different things from Pepsi Roast (it was pretty tasty) to other recipes that were not so much! (That one with the red wine, gak!)

Anyway, Jenny from In the Kitchen With Jenny was kind enough to share her Tostada recipe with me!  (You can find her recipe HERE!)  Now, mine is not hers!  Hers inspired mine, but I will admit that I don’t keep a lot of spices in the house and didn’t have the majority of what she used to make hers, so I just went with the general idea and came up with my version of Shredded Beef Tostadas.

Garlic Roasted Broccoli

I can eat broccoli and roasted is where healthy eating is at!  I enjoy a large variety of vegetables in almost anyway shape or form.  I’m also constantly looking for new ways to enjoy them so I will eat them more!  While the majority of my posts revolving around #TastyTuesday are family meal centered, I like to throw a healthy recipe in every now and then! The other day I made this and it was so delicious that I knew I had to share it with you all!
