Eating healthy and having an extreme sweet tooth is a challenge! I can easily fall prey to revel bars, chocolate chip cookies, and ice cream. Eating healthy is especially important right now as I’m participating in the Live Healthy Iowa 10-Week Challenge with a team of other Iowa Bloggers (check out more here)!
The Recipe
Thankfully, I’ve found a few healthy items that can fulfill that sweet-tooth as well like my honey apple fries! Not long ago, I was able to satisfy that sweet tooth with these Honey Glazed Coconut Almonds! They are just enough sweet without being too sweet and made with all “whole” ingredients!
- 1/4 cup honey
- 2T water
- 1/8 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/4 teaspoon almond extract
- 6 ounces whole natural almonds
- Unsweetened Coconut
- In a small bowl whisk all the ingredients together so they are mixed well.
- Then, stir in the almonds.
- Strain the almonds out of the honey mixture with a slotted spoon and place a single layer on a lined cookie sheet.
- Sprinkle with unsweetened coconut.
- Bake for approximately 15 minutes at 350.
- Remove, cool, and store in an air tight container.
Cooks Tips
- This recipe is so simple!
- Using the water mixed with the honey makes it easier to strain the honey off the almonds. This gives the almonds just a hint of honey sweet flavor without being too much (thus helping you reduce your intake of sugar).
- If you’d like more honey on your almonds, just reduce the amount of water. When you do this, also keep in mind that the single layer is very important here and it’s also harder to strain the honey off (for obvious reasons), so you will need to cook the almonds longer to get the honey crispy/crunchy! You can also omit the coconut if you aren’t a fan, but the little bit adds a lot of flavor.
This is a great snack when you’re trying to stay on the healthy track and need just a little sweet crunch in the afternoon! I hope you enjoy it!
