Meal Planning – Smothered Ribeye Steak

Last weekend I was feeling adventurous. I wanted to try my hand at a few things and test some things out. I had thawed out some ribeye steaks and bought baby red potatoes at the store because those are a favorite of T’s. My goal was to recreate a summer-time meal of steak and roasted potatoes. I looked through my recipe box and decided to combine a couple different things to come up with a marinade of sorts for the steak.  Here is what I came up with!

The way our life works, sometimes I have the time to play with recipes, create recipes, cook, and baked.  Sometimes, I’m merely surviving.  Thankfully, there are always times here and there between our busy schedules that allow me to let this part of my creative brain run wild!

The Recipe

Smothered Steak

Ingredients
  • 1/2 cup Italian salad dressing
  • 1/3 cup sour cream
  • 4 1/2 teaspoons Parmesan cheese
  • 1/2 teaspoon black pepper
  • 2 steaks
  • 1-2 tablespoons flour
Instructions
  1. Combine the first four ingredients and marinate the steaks in the sauce for several hours or overnight.
  2. Preheat the oven to 350.
  3. Heat an oven safe fry pan on medium high heat, sear the steaks on both sides, cover the pan with foil, and place in the oven.
  4. Cook until you have achieved your level of done and remove from the oven.
  5. Remove the steaks from the pan and return it to a medium high heat burner, bring the juices to a bubble, then whisk in 1-2T of flour to create a sauce for your steaks!

 

These steaks were amazing!  I don’t usually like to use those kinds of words with my food reviews because I think it sounds forced, but it’s true this time!  They were tender, flavorful, and hit the spot on a cold winter night.  I also quartered some baby red potatoes and roasted them in a mixture of olive oil, thyme, parsley, garlic, & minced onion!  They were the perfect side to our steaks!  This marinade and process could easily be done with any cut of steak you choose!
