I’ve never been a huge fudge fan until I made this Peppermint Mocha Fudge! Now, I’m hooked and can eat the entire batch by myself, whoops! HA!

Baking Christmas Treats

I grew up in a traditional home that always baked lots of Christmas treats to take to every holiday get-together! As I’ve been an adult, I’ve liked making a variety of treats, but time doesn’t always allow for it. So, now I like recipes that mix up and bake quickly.

As much as I haven’t been a fudge fan, I’ve never been a mint & chocolate combo fan! I’m also still very picky about which kind of mint it is! But, as I go through my second Christmas without being able to eat traditional Christmas cookies due to a gluten allergy, I’m looking for new treats to try and make!

Last year, I found a recipe for mocha fudge that used white chocolate chips. It was very good and I enjoyed it, but it was a tad too sweet for me. And while I like white chocolate, I definitely prefer milk or dark! So, this year as I was looking to develop a new fudge recipe, I decided to work off that mocha fudge recipe and adapt to one of my own. This Peppermint Mocha Fudge definitely combines everything I love about a recipe…delicious, easy, and lots of chocolate!

The Recipe for Peppermint Mocha Fudge

Peppermint Mocha Fudge

Ingredients
  

  • 1/2 cup butter
  • 2/3 cup evaporated milk
  • 2 cups granulated sugar
  • 3 T instant espresso powder
  • 12 oz semi-sweet chocolate chips
  • 1 T vanilla
  • crushed candy canes

Instructions
 

  • Combine the butter, sugar, evaporated milk, and espresso powder in a medium sized saucepan over medium heat.
  • Stir until all is melted and combined.
  • Remove from heat, add the chocolate chips, and vanilla. Stir until combined and smooth.
  • Pour into a greased 9×13 pan
  • Sprinkle with crushed candy canes, lightly pressing them into the top of the fudge.
  • Set in the fridge until fully cooled and firm.
  • Cut into bite sized pieces and enjoy.

Cook’s Notes

  • While heating and stirring the first ingredients, it will look as though not all the espresso powder is dissolved. It will finish dissolving when the chips are added and melt.
  • Make sure to stir constantly while on the stove top as to avoid burning and scalding.
  • The amount of crushed candy canes is completely up to you!
  • This fudge does not get hard/extra firm. It is a softer fudge, so don’t think that you did something wrong!
  • Feel free to change up the kinds of crushed mints on the top if you choose!
  • If you don’t have espresso powder, you can use instant coffee.
