I thought I’d break up the travel posts with a new recipe and this Strawberry Banana Sweet Bread is just the one to start with!

Developing Strawberry Banana Bread

I am a self-proclaimed carb junky!  If I left myself, I would eat all the carbs, every single day!  And sweet breads are one that I cannot turn down!  In college, I worked in a coffee shop that always had sweet breads in it: banana, pumpkin, chocolate zucchini, etc!  One of my favorites was strawberry!  A sweet bread base with chunks of strawberries inside was a great balance of sweet and tart!

North Iowa received its first snow of the season on October 14th, which meant I was ready to bake!  My Easy & Simple Banana Bread was already on the docket for my guys, but I couldn’t stop thinking about that strawberry bread.  Then, I remembered I had some frozen strawberries in the freezer, so I decided to play with all these thoughts!

Strawberry Banana Sweet Bread

A fun and refreshing take on traditional banana bread.
Ingredients
  • 4 bananas, mashed
  • 1/3 cup butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • One egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 pinches sea salt
  • 1 1/2 cup flour
  • 1 teaspoon cinnamon
  • One cup diced fresh strawberries
Instructions
  1. In a bowl, combine the bananas, sugar, butter, egg, & vanilla. Mix until creamy and smooth.
  2. Add the baking soda, flour, cinnamon, and sea salt. Mix completely.
  3. Fold in the strawberries and pour into a greased loaf pan.
  4. Bake for one hour at 350.

Cooks Notes:

  • I like quartering my strawberries so they are substantial when I bite into the bread, but you could also chop them much smaller!
  • If you don’t have fresh strawberries on hand you can definitely use frozen ones.  Thaw them completely and then drain thoroughly.
  • Enjoy the bread warm and with a glass of milk!
