I love finding new recipes especially when they are on the healthier side. I recently found this recipe and decided to give it a try this week with a few tweaks of mine of course!
In a small bowl, whisk together the orange marmalade, water, & soy sauce. Toss the chicken and broccoli slaw (I used about 2/3 of the bag). Before serving if you so choose you can add crushed ramen noodles or slivered almonds. Right before serving lightly toss the salad around to coat it with the dressing and then drain the dressing off. Then, you have an option, fill large lettuce leaves, spinach leaves, a flat bread. I choose to fill FlatOut FoldIts because I like my carbs and need them after I burn them during my morning run! But, I feel better about eating my carbs when they are from FlatOut. FlatOut FoldIt’s are an Artisian Flatbread that are low in fat and a good source of fiber. FlatOut also makes wraps in a variety of flavors!
I loved the crunch in this chicken salad along with the light dressing, and the protein from the chicken! Pair it with an apple (like I did) and I was full and felt light and satisfied after my lunch.
Great recipe and I love Fold Outs and always seem to have them on hand because they are perfect. I just saw a recipe for an avocado chicken salad that would be perfect in a a Fold Out!!! I need to go save that one off along with your oriental chicken salad recipe!
