Filling and flavorful are two perfect words to describe this Turkey & Sweet Potato Skillet!
When I gave up eating white potatoes (with the exception of a few random meals with mashed potatoes), I thought I would miss them! But, I have a new found love for sweet potatoes. And when I say a love for them, I mean I could eat them every single meal in almost any way you’ll make them!
I’ve also been trying to cut down on the amount of red meat…not because I don’t think it’s healthy, but I want the protein content with a fraction of the calories, which has led me to ground turkey!

Development
One day, I was meal prepping and had ground turkey out and was trying to figure out what to do with it! I love me some sweet potatoes (like I mentioned) and wanted to enjoy them at work too! I thought….why can’t I combine them in a Thanksgiving sort of dish! So, that is what I developed! The fact that it’s a one-pan meal is just a bonus!
The Recipe
Turkey & Sweet Potato Skillet
Ingredients
- 1 lb ground turkey
- 2 sweet potatoes
- 1/3 cup onion chopped
- 3 T green pepper chopped
- 1/3 cup celery chopped
- 1 t ground sage
- 1.5 t dried rosemary
- 1/2 t black pepper
- 1/2 t salt
- 4 T olive oil
Instructions
- Preheat oven to 400 degrees
- Begin by combining 3 tablespoons olive oil along with the onions, green pepper, & celery in a large skillet. Cook while peeling and dicing the sweet potatoes
- Add the sweet potatoes to the skillet and place in the oven for 20-25 minutes stirring occasionally
- While the vegetables are cooking, brown the ground turkey, drain, and set aside
- In a small bowl combine the sage, rosemary, salt, pepper, and 1 tablespoon olive oil
- Once the sweet potatoes are tender, add the ground turkey and seasonings to the skillet, stir thorougly and return to the oven for about 5 more minutes
Cooks Notes:
- I like to finely dice my peppers, onions, and celery as fine as I can! In fact, I use my Tupperware Chop ‘N Prep, which makes it so easy!
- If you like to bite into onions and peppers, don’t cook them on the stove top before placing in the oven! I like for them to practically disappear, but leaving the flavor
- If you don’t like larger diced sweet potatoes, you could easy shred your sweet potatoes and it would cook a lot faster too!
- If you don’t like ground turkey, you can easily use ground beef or even pork!
