Gorton’s Seafood & #Realistic Resolutions

I received a Gorton’s Seafood & SparkPeople package for the purposes of reviewing, but all thoughts & opinions are my own & 100% honest.

Cooking for three guys has given me my share of challenges over the last 4-5 years. I love these three guys more than anything, but they are some of the pickiest eatersI have ever met! They make cooking a challenge. I’m all for eating healthy and making a good balaced meal as I believe it’s all about healthy choices and a healthy lifestyle that make our insides happy…not just our organs, but also our emotions and thoughts are healthier when we are healthier.

offerings of fish to something other than fish sticks!  What an exciting discovery.  Sunday morning we had a breakfast of pancakes and bacon and while it was tasty, I felt yucky and fat after eating it!  I already had steaks and potatoes planned for supper (some of T’s favorites), so I decided we were keeping it light for lunch!  Just the day before I had visited the grocery store and stocked up on Gorton’s newest products thanks to the package that I received from them in late December as part of the 28 Day Realistic Resolution campaign.    I also didn’t want the traditional lunch sides (or at least traditional in our house) of chips.  I had just stocked up on vegetables, so I took to my new SparkPeople Cookbook and found the following recipe.

Start by prepping your asparagus (washing and cutting the woody ends off), then place in a single layer in a baking dish, sprinkle with salt, pepper, and spray with no stick baking spray.  Bake for about 15 minutes at 350 degrees, turning half way through.  While your asparagus is baking (and fish of course), prep your Light Lemon Sauce.  Combine all ingredients in a small blender or use an imersion blender to blend all the ingredients until smooth!  (A side note…I didn’t have any fresh lemons, so I used about 3T lemon juice.)

I let T pick the fish as he is a bit pickier about his fish than me.  He had quite a few options to pick from.  He chose the Baked Roasted Garlic & Italian Herb fish.  It was simple to bake and baked up crispy and fresh without having a fishy taste to it.  It had a strong herb flavor, but it wasn’t overpowering.  T even said that he was “hooked”!  Yes, pun was intended!  Coming from a guy who isn’t usually pleased with fish, this was a good “review”.

My asparagus was roasted perfectly and I drizzled the Light Lemon Sauce on it.  I also used the sauce with my fish and that was amazing!  The light flavor really complimented the herb flavor in the fish breading.  I will definitely be making the sauce again!  In fact, I plan on using some with the grilled fish later this week!
