National Eat Your Veggies Day: A Vegetable Recipe Round-Up

Did anyone else grow up with your parents making you eat your veggies?!  Do you make your kids eat their veggies?  I’ve compiled this vegetable recipe round-up of amazing veggie recipes to help you out!

Eating Your Veggies

I remember when I was growing up, my parents always had vegetables at every meal.  We had the staples of green beans, corn (which I now know really isn’t a vegetable), and carrots!  I HATE cooked carrots.  When I was little, my  mom would put carrots in with the potatoes and roast on Sundays for dinner after church.  I always had to eat two bites of cooked carrots, it was the rule in our house.  Same with beets, yack!  However, now I love eating veggies and usually can’t get enough of them!  My favorites are broccoli, asparagus, & chopped salads with cabbage and more in them!

Recipe Round-Up

The older I get, the busier I am and I appreciate recipe round-up posts so I can have links to SEVERAL posts all in one place.  Since it’s National Eat Your Veggies day, I thought what better reason than that to create this round-up!  Several of my fellow Iowa bloggers have shared their very best veggie recipes with me to share with you!  There is a big variety and I’m sure you’re bound to find something everyone in your house will love.

Salads & Sides

The first salad on my list is one of my favorites and yet I don’t make it enough!  Val of Corn, Beans, Pigs, & Kids is famous in our group of friends for her Overnight Salad! !

The Gingered Whisk created this great squash recipe:  Orange Pecan Acorn Squash

She also offers this Easy Perfect Garlic Roasted Zuchini!

One of my favorite vegetables is asparagus and this Oven Packet Asparagus is so easy!!

And one of my favorite veggies, Green Beans she has this twist on Easy Roasted Green Beans

I’ve recently found brussel sprouts thanks to the Fieldhouse in Clear Lake and this recipe for Crispy Brussel Sprouts with Bacon from Ally’s Sweet & Savory Eats looks easy and delicious!

And Creamy Broccoli Salad is definitely a favorite of mine!  I’ll eat some anytime it’s around me!

And these Zesty Creamy Cucumbers are everything for me during garden season!  I can’t get enough!

T’s favorite is this Honey Mustard Coleslaw!

 

Main Dishes

A lot of people can overlook veggies in their main dishes, but it’s a great way to get them into yourself or kiddos without having to eat them individually!

Quiche can be great not only for breakfast, but also for supper!  Corn, Beans, Pigs, & Kids threw veggies into hers and it looks delicious Farmers Market Quiche .  And if that one doesn’t get you, give my Hearty Veggie Egg Bake a try!

  1. Val’s overnight salad is the best- but I think part of the reason is their homemade bacon. That veggie egg bake looks like something we should make soon.

    1. I agree that Val’s salad is the best!! I haven’t made the veggie egg bake in quite awhile and think I need to sop!

  2. I am a meat eater and my wife and daughter are vegan nevertheless I do like to have a healthy salad. I especially like to have my greens several times a week thanks to my wife and daughter! I have to admit I love meat ande I don’t know if I can really convert to a vegan diet!

    1. I love meat too and am definitely not a vegan! It’s great to get some greens in your diet as well!!
