Not everything that I bake or make in my kitchen is healthy! In fact, typically the health foods are for me and the junk food is for the boys in my family! Lately these Peanut Butter Chocolate Chip Bars are at the top of the list! I think they’ll be one of your new baked go to’s now also!

The combination of Peanut Butter & Chocolate has always been a popular one in our house! Reese’s Peanut Butter cups are always the first candy eaten, peanut butter is smeared on Hersey bars and….well, I think you get the picture!

Peanut Butter Chocolate Chip Bars

I found an old recipe in my recipe box. I have no idea where it came from or if I’ve ever even made them, but decided to tweak it and create my own featuring the most popular combo of peanut butter and chocolate.

Peanut Butter Chocolate Chip Bars

Ingredients
  

Peanut Butter Chocolate Chip Bars

  • 1 cup crunchy peanut butter
  • 6 T butter softened
  • 1/2 cup brown sugar packed
  • 3/4 cup sugar
  • 3 eggs
  • 1 t vanilla
  • 1 t baking soda
  • 1.25 cup flour
  • 1/4 t salt
  • chocolate chips

Peanut Butter Chocolate Frosting

  • 1/2 cup creamy peanut butter
  • 1.5 cup chocolate chips
  • 2 T butter

Instructions
 

Making the Bars

  • Preheat the oven to 350 degrees
  • Line a 9×13 pan with parchment paper
  • Beat the peanut butter and softened butter together
  • Add the eggs & vanilla, beat until creamy and fluffy
  • Add the baking soda, salt, and flour and mix thoroughly by hand
  • Add the chocolate chips
  • Spread batter in the greased pan and bake for 20-25 minutes until golden brown and just set in the center.

Making the Frosting

  • While the bars are cooling, combine the creamy peanut butter, butter, and 1.5 cups chocolate chips to a small sauce pan.
  • Heat and melt all together over medium heat, stirring occasionally at the beginning and then constantly towards the end.
  • Once the peanut butter, chocolate chips, and butter are all melted and smooth, pour evenly over the baked bars.

Cook’s Notes

  • You’ll notice that there is no set amount of chocolate chips in the bar portion of the recipe. That’s completely up to each person! In my house, the more chocolate chips, the better! If you don’t like as much, don’t add as much! 🙂
  • Peanut Butter…if you have a strong opposition to crunch/chunky peanut butter, feel free to use creamy in the bars. We just like the texture it gives the bars!
  • Make sure to not overbake the bars or they will dry out, but don’t underbake them or they are really gooey! Make sure to wiggle the pan a little before taking them out to ensure the center is set!
  • If you don’t want to use parchment paper, use a silicone pan to make sure that the bars come out of the pan easily!
