#TastyTuesday – Guest Post by Fit & Farm

I’m very excited to introduce you all to Alicia from Fit & Farm!  She is one of my fellow #NorthIowaBloggers and I have loved getting to know her.  She posted a picture of these potatoes a couple weeks ago and I knew that she needed to make an appearance on #TastyTuesday!

Hi All! When Katy asked me to guest blog for her I was so flattered and and very happy to do so! I love reading Katy’s Tasty Tuesdays and I think our cooking styles complement each other. We both have busy families, but time is scarce and we have hungry tummies to feed. My best partner in crime is my crock pot. When I come home I seem to hit the ground running again chasing my 2 year old and keeping her occupied while making supper, this is always a challenge. My crock pot has a lot of miles on it and keeps me ahead of the game! One of my favorite recipes to make and bring to potlucks and gatherings is my crock pot cheesy potatoes. I make it about once a month in the winter and it goes pairs well with many meat dishes from casual burgers or meatloaf to fancy pork roasts, its truly a favorite! I’m sure you have had cheesy potatoes but here is my crock pot version.

 Crock Pot Cheesy Potatoes

1 stick of melted butter
1 can of cream of cheese or mushroom soup
1 chopped onion
8 oz. of sour cream
1 bag of shredded frozen hash brown potatoes
1 8 oz. bag of sharp cheddar cheese

Melt butter in the microwave in a bowl with the chopped onion to soften the onion a bit. After the butter is melted transfer it to a very large bowl. Mix the butter and onion with cream of cheese soup and sour cream. Next pour in the bag of shredded hash browns and bag of sharp cheddar cheese. Mix well with a large sturdy spoon. Pour mixture into your crock pot and cook on low 6 hours or high for 4 hours. Start stirring about ounce per half hour towards the end.

Tip: If you want to make this while you are gone for a day put your crock pot on a timer that you plug in so you don’t come home to crusted potatoes. 🙂
