#TastyTuesday – The NEW Breakfast Sandwich

I run first thing in the morning! My alarm goes off at 5:01 every weekday (don’t ask why 5:01…it goes back to college) and I get up and run or do core/strength training. When I’m done working out, I traditionally am not hungry nor do I have time to sit down and eat breakfast (if I want to make it to work on time)! So, I’m constantly looking for new healthy breakfasts, which are also yummy! In the last week I’ve stumbled across my new favorite breakfast!

The morning meal, for me, has always been a struggle because I need something hearty and/or full of protein or I’m starving an hour later. I like carbs (especially on days that include a run). So, I’ve done eggs (in the microwave) and love a good Yoplait Greek Whips, but still wasn’t feeling satisfied! Until…the NEW Breakfast Sandwich!

Let’s start with the supplies you will need:

  • a low carb/low calorie/low fat bread product – In the past I’ve used FlatOut FoldIt’s and have enjoyed them.  As of this past week, my one lowly grocery store in town no longer carries them, so I have discovered Toufayan Bakeries Smart-Pockets in 100% wpid-1426637624638.jpgWhole Wheat!  (Shh…don’t tell FlatOut, but I like them better).  They contain lots of fiber, they have 0 grams of trans fat, they have protein in them, and are only 80 calories a pocket.
  • Laughing Cow Creamy Swiss – I’ve chosen this kind of laughing cow because to me, it’s the most like a cream cheese but with a FRACTION of the fat and calories!
  • Honey
  • Fruit of your choice: I’ve been enjoying sliced strawberries & bananas
  • Granola  – I use Bear Naked granola because it is low in sugar! (optional)

My new sandwich began last week when I had lots of pieces for breakfast, but nothing really to make a whole meal.  So, I thought…let’s smear some Laughing Cow (I only use about half a wedge) on a FoldIt…drizzle some honey for sweetness (only about 2t) and then sprinkle some Triple Berry granola on it, fold it up and ate it like a sandwich.  Not too shabby.  I really enjoyed the crunch of the granola combined with the sweetness and the honey mixed with the Laughing Cow made a real sweet flavor (almost like a filling for stuffed French toast).  Over the weekend, I stocked up on fruit and this week thus far, I’ve enjoyed the Whole Wheat Smart Pockets (I cut the sides so they appear more like a bun!) with Laughing Cow, honey and either sliced strawberries or a halved banana.  The strawberries have been my favorite by far!  It REALLY does taste like stuffed French toast!

The greatest thing about this breakfast is the use of FRUIT, getting good grains, and protein in my system.  I feel beyond satisfied when I’ve finished my sandwich and it keeps hunger at bay for several hours!  What would you put in the NEW Breakfast Sandwich??

  1. They are! I was surprised at how simple and delicious they ended up!! I can’t wait to try a variety of fruits! I think peaches or nectarines would be good too!
